It’s Friday Guys – time for No Waste Tastes Great

Simply Being Mum’s Friday Fridge

Top Shelf – Spreads, cheese, garlic and 2 x green chilli’s (in blue tub)

Top Middle Shelf – Grapes and some leftover raspberry frosting

Bottom Middle Shelf – Small head of broccoli and a handful of cooked pasta

Bottom Shelf – My Mom’s home-made pickled beetroot (yes another jar!)

Door – Milk and OJ

Not bad eh?

The plan – not too taxing this week…

Top shelf all in date – sorted.

Grapes will be eaten after school today by the Kids and I. The frosting is left over from decorating some muffins on Monday. First-born wants to do a cake-stall at the weekend and sell them to unsuspecting relatives – that should use all the frosting up. She’s donating the money to charity.

The handful of pasta I will add some veggies and sauce for Second-born’s lunch after school (he only attends morning’s at the moment).

And the broccoli has already been dealt with;

I’m slow-cooking it on high (so it should be ready by lunchtime as it’s a small portion) with cheese. I’ll have it as soup for lunch today and tomorrow.

Talking about soup. I also have these remaining from my grocery shop;

6 sweet potatoes, a butternut squash and two onions. I have a great recipe to batch cook two different kinds of soup from these ingredients (using the 2 chillis also). They’ll be frozen for lunches next week.

So what’s for dinner tonight as there isn’t anything to use up? Well Friday Night is Date Night at Chez Wright. We had been partaking in a takeaway but since my cooking from scratch experiment I’m finding it harder to make that call and put my order in. Friday night is now slow-cooked curry night. As I now grocery shop on a Friday, I grab anything I need and load the slow cooker up after lunch. The Kids will be having home-made flat-bread pizza and veggies. I’ll make some extra flat-breads for the Hubby and I to have with our curry.

Just going back to soup for a moment, I have decided to put together a mini e-book of my 6 favourite simple vegetarian slow-cooked soups. It’s a free e-book, a little thank you to you all for reading (and putting up with me!).  I’m not sure exactly when it will be completed. Daytime light currently in the UK is making taking decent photos difficult. A particular problem for me, as my kitchen has black granite worktops and a very dark floor.

    Fridge looks great as always. I’ve been ill this week, so couldn’t even tell you what’s in mine. But I think it’s pretty much under control. Unless my flatmate has snuck anything in there since I last shopped a week ago!

    • Oh Lauren – hope you are feeling better?
      You need to keep an eye on your flatmate… I recall some reminding needs doing to get stuff eaten!
      Brutally honest, no punches pulled feedback would be great after you get it!

  3. I would love a copy of your ebook! I do hope you will include the broccoli cheese soup you reference in this post (it seems too easy to just dump chopped broccoli and cheese into the slow cooker??? or is that really all there is to it?). I always love trying new recipes!

    • Hey Clara – it really is that simple, okay well the broccoli one is slightly (only slightly) more involved. But if making Cauliflower and cheese soup literally it’s that plus stock and seasoning. And it tastes fab!

    • Glad you are still enjoying the tomato soup, I must say I took a flyer on that one, but it worked out pretty good (better when I reduced the chilli)…
      Don’t forget I’m after feedback, and also don’t be surprised if I don’t come a knocking on your virtual door for advice :-) you’re already an e-book author!

    • Thank you Cheeryshirley! I’m a little disappointed with the quality of the fridge photo – it’s still trial and error at the moment trying to get the best shot. The weather in the UK is abysmal and the light is so poor, but at the end of the day a bad workman always blames his tools ;-)
      A copy will be winging it’s way through cyberspace as soon as I pull my finger out. Feedback please once you’ve taken a look! and don’t go easy on me!

  6. Please, oh please, I would love a copy of your book. I’m very into slow cooking soups as the perfect way to use up all those odds and ends, and all the soups you’ve written about sound just delicious.

    • Susan we are on the same page ref slow-cooking. I love food, and serving great meals and all of those things, but I do like to just chuck it all in and have an amazingly tasty and nutritious meal. Slow-cooking just works! So glad you’d like a copy of the book and please do feedback…

  8. Jo, I’d love a copy of the ebook as well; we’re always looking for new soups to try! I have never had broccoli and cheese soup and always thought it sounded good but have no clue how to make it. I’m Looking forward to learning! :)

    • Broccoli and cheese soup is really good, I had some today but left some broccoli and cheese un-blended. Very nice! You’ll get a copy once I get it finished – please let me know what you think!

  10. would love a copy of your e-book. i have been vegetarian for 14 years and would love some different recipes! :) i also came to your blog from kristen’s and i am very jealous of your nice tidy fridge! :) my 4 boys seem to mess up my fridge every time they get a chance. the oldest(9) is getting better but the other 3…..that’s gonna be a while :)
