This simple and healthy pizza recipe has been on my mind the last few days.
Probably due to the following 3 reasons:
- I noticed that Aldi UK has reintroduced ready-made pizza dough sheets into their stores
- A friend text me asking Bella Italia’s phone number in Blackpool
- I’m trying to be more mindful of what I eat
Although I’m not making this healthy pizza recipe personally today, or tomorrow, it’ll most likely be on my meal plan next week (I so need to get back to sanity-restoring-meal-planning soon – It’s been rather hit and miss over the school summer break and without a doubt it’s been detrimental to our home-organisation!)
This super simple yet also healthy pizza recipe is too good not to share once more – after all you may have missed it first time round? I can’t be having that, can I?
Full disclosure on this – I cannot take credit for the design (do pizza’s come with copyright?). My healthy pizza recipe was inspired by Bella Italia’s Pizza Vita – which weighs in at under 600 calories per pizza, now that’s lightweight for a pizza. My version below is even lighter in calories (featherweight?) but has a few less toppings on it than the original (not sure where the ‘boxing’ analogy sprung from?).
Whenever I post an *inspired* recipe it always reminds me of the women’s magazine features where they try to replicate a star’s style – or is that just me?
Simple and Healthy Pizza Recipe
The simplest way to get your base is to buy a ready rolled pizza dough sheet – it typically cuts into approx. 3 bases
Place on a non-stick tray and spread over the pizza topping (for convenience I used pizza topping from a jar)
Bake as per the dough instructions – it should be approximately 10 minutes in a hot oven
Remove pizza base from the oven and top with:
A good handful of rocket
Halved baby plum tomatoes and sliced Mozzarella cheese (40g is about right – a 1/3 of a ball)
Other tasty toppings that could be added include spinach and/or basil leaves and olives for a full on Mediterranean taste sensation.
