It’s Friday Guys.
Food Waste Friday or rather #FoodWasteFriday (don’t forget the hashtag).
And it’s my week to officially host.

Simply Being Mum’s Friday Fridge
Top Shelf – Spreads and cheeses
Top Middle Shelf – Salad, cucumber, strawberries and grapes
Bottom Shelf – Watermelon, Greek yoghurt, marmalade and tikka paste
The fridge is pretty sparse. The fruit and salad will be used up as part of a picnic lunch today. The remaining Greek yoghurt will make some more of Manju’s dip that we were taught at the Making Sense Of Sugar event earlier this week. See how to make your own here.
The fridge contains no waste, but I did have some mid-week store cupboard waste.
There’s a whole lotta mould going on. Even the jar of olives has grown some mould – that’ll teach me not to refrigerate after opening.
Maybe it’s the summer temperatures? Then again maybe not. It’s hardly mediterranean here in England.
There’s also some food to save.
B = Bananas, Beetroot & Beans.
The bananas will be headed for two of these loaves.
As for the beans, I’m thinking a Sunday roast may be on the cards. But we may have it Saturday instead of pizza, just to make sure the beans do get used up.
But I’m looking for some suggestions as what to do with the homegrown beetroot!

Beetroot goes brilliantly with horseradish. My mum makes a great salad that is cooked beetroot cut into chunks, with a horseradish dressing.

Cook the beet root, julienne and add to salad. The greens can be served in an orange sauce. Just google Harvard beets recipe

Sorry, I realized I wa thinking of a different recipe. Sauté the Bert greens in butter, remove from pan and set aside. Next, melt 1 tbsp butter in the same pan used, remove pan off heat and add 2 tsp flour, 2 tbsp brown sugar and 1/2 cup orange juice. Return pan to heat and whisk constantly until thickened. Add beet greens and stir to coat well. This was originally a recipe circa 1920s USA using 1 can of beets that would be warmed up, drained, the sauce made, the drained beets added to the sauce. I wa looking for a way to serve beet greens to children. This is a keeper either with cooked beets, just the greens or both, mixed.

You could juice the beets with some celery, lemon and apple. Its delicious.
I had a couple slices bread that went moldy in the fridge and some apple sauce midweek. Have not cleaned it out yet but i don’t think there is much damage left this week. Today is a leftovers dinner to use up stuff.

Mold is rampant here in the high humidity, and I lost a lot of great things – including blueberry muffins! I should have taken them out of the freezer individually. Into the composter they go…
I love roasted beets! They take about as long as potatoes do, but worth the preparation. Warm or cooled, I top them with mustard vinaigrette, orange sections, and goat cheese. Nom.
The local homeless shelter also serves beets as part of a vegetable fry-up in the morning, mixed with potatoes, sweet potatoes, onions, turnips, parnsips, carrots, etc… Anything, really. So very tasty! (I volunteer there once a week in the morning, and I’m not the only staffer who drools for the breakfasts they serve.)

That all sounds A-Mazing. I hadn’t thought of roasting. Goats cheese keeps being mentioned as a good accompaniment also. Thank you and good work with the volunteering 😉

Eek! I have some green olives in my fridge too. I keep assuming they are still good. I guess I better snack on those this afternoon. Great reminder.
I did great this week because I’m still avoiding actually cleaning out my fridge. We are about to move so we are gradually cleaning it out and buying less. Buying less is helping us waste less too!

I adore sliced beets on a bed of greens, with some goat cheese and a simple balsamic vinaigrette. My favorite way to eat them!

Cleaned the fridge this morning, only lost one serving of a zucchini casserole that somehow got pushed to the back, and a moldy tomato. The tomato came from the garden of the veterinarian at the clinic where I groom, and it was a bit soft when I got it. I also disposed of some homemade vinaigrette dressing that just wasn’t my favorite. Easy come, easy go.

Not too bad ! We do try our best. Can’t have zero waste every week… So long as we’re keeping an eye on it – like we are 😉
