How To Make The Perfect Pancake

Let’s clear this up before we get started. I know, and you know, there is no such thing as perfect.

(Remember my Good Enough Chocolate Fudge Cake?)

It just made a great title.

Not to detract from how good home-made pancakes are though. We love pancakes made from scratch at Chez Wright.

I also love photographing pancakes. Simple pleasures right?

SBM Pancakes

It’s Shrove Tuesday tomorrow, aka Pancake Day. This year I’m not making pancakes. Whaaaaaaat? No, really I’m not.

This is probably the first year ever. But I’m struggling with my heavy-based iron skillet. I’m cooking one-handed, and it’s not working out that well.

So to add insult to injury I thought I’d share my pancake recipe.

Think of me while you’re making your own. I’ll be opening some plastic packaging… (a double dose of guilt).

    My pancakes never look that good! We celebrate Fat Tuesday/ Shrove Tuesday and will be eating pizza since my hubby is giving up carbs for Lent. I might try to make some pancakes for breakfast too!

    My pancakes never look that good! We celebrate Fat Tuesday/ Shrove Tuesday and will be eating pizza since my hubby is giving up carbs for Lent. I might try to make some pancakes for breakfast too!

    My husband is the pancake maker in our house. For some reason it’s something that I just cannot seem to get right. He uses a mix where all you have to add is water! When I made them in the past, I used this recipe – can’t give credit as I have no idea now where I got it originally: 1-1/2C flour, 2 tsp baking powder, 3/4 tsp salt, 1 egg, 2 tbsp oil, 1-1/2C milk. I’m sure the fault is not in the recipe, it’s me – I just can’t seem to cook them the right amount of time, or on the right temperature, etc.
