It’s Friday Guys – Time for No Waste Tastes Great

(it’s an early one this morning as we are off to Conkers for the day)

Simply Being Mum’s Friday Fridge

Top Shelf – Spreads, cheese, garlic and yoghurt – all in date so no waste there!

Top Middle Shelf – 4 peppers, 2 onions, half of a very large courgette and half a bag of salad

Bottom Middle Shelf – Strawberries, red grapes and a cucumber

Bottom Shelf – Carrots and broccoli

Quite a few peppers, no?

I’m thinking vegetable lasagne for dinner with a side-salad? That’ll take care of 2 peppers, an onion, most of the courgette/zucchini and the bagged salad.

Any courgette not used, I’ll shred using my new food processor (which I love!) and make Zucchini Chocolate Bread (which I also love!).

The 2 remaining peppers will be chopped and frozen.

I purchased some strawberries, earlier this week, to make Naked Strawberry Muffins, but didn’t get round to it. They’re still fresh enough to rustle a batch up tomorrow and freeze any leftover berries for smoothies.

My cucumber and grapes are still good enough to eat, and will be used up next week. I’ve previously said there’d be no more cuke here to sabotage my food waste efforts. This one is homegrown and gifted to me. Not a piece of plastic wrap in sight. And guess what? It’s lasting well.

Finally the carrots, broccoli and the final onion. Time to make some slow-cooked soup, me thinks. I love spicy carrot soup, and the broccoli will go very nicely with some stilton.

      Think we missed that… hmmm in fact I think we missed chunks out altogether but still a good time was had by all. Have you been? And how’d the camping trip go?

      Hi Sandy – how lovely to “virtually” meet you! I was incognito in wet and windy Wales last week, a very long way from Texas!! No phone reception at all so I couldn’t pop by Kristen’s. Maybe I sound go underground more often, if it helps readers to de-lurk? ;-) It really is a pleasure to get to know readers! Have a great weekend! (couldn’t resist googling your weather over there…looking hot…it’s raining here and the equivalent to UK spring temp – which ain’t warm ;-) ) Jo
