Simply Being Mum’s Friday Fridge

Top Shelf – Spreads, unopened parmesan (phew!) and soft cheese

Top Middle Shelf – 1/4 packet of salad

Bottom Middle Shelf – Half a lemon, an orange, a smidge of melted and hardened chocolate and buttercream

Bottom Shelf – Punnet of strawberries

Door – Milk

After last weeks’ parmesan debate, I’m relieved it remained unopened this week. I’ll be taking it on holiday with us. Did I mention we were going away? Off to Wales we head.

The unopened soft cheese is also heading for the hills. I purchased it this week outside of my usual shop. A neighbour had asked whether I knew a recipe for a low-fat carrot and orange cake. Always one for a bit of baking, I thought I’d do a little better than a recipe. A cake was planned. But alas it did not materialise.

Talking about cake. Today is going to be a bake-a-thon.

Yesterday I was all ready to go.

I have 2 huge home-grown courgettes to use up that were donated on Monday. (1 courgette is destined for a vegetable lasagne next week).

I’d even got out my American measuring cups to follow this recipe.

Alas no eggs. I’ve been so on the ball this week, only buying exactly what was needed and keeping on top of the fridge, that I wasn’t prepared for this deviation in the menu-plan.

Normally I’d ask a neighbour if I could borrow some, however I’ve done this a few times lately. I’m waiting to pick some up when I do my holiday grocery shop later this morning.

Whilst the oven’s on and the kitchen’s a mess I’ll clear the rest of the potential waste. I plan on making some sticky-bottom cupcakes.

  • Lemon drizzle – using up the lemon.
  • Strawberry – which will use a handful from the punnet my Mom gave me – the rest will be frozen for smoothies.
  • Finally, the melted chocolate needs to go and I spy an orange lurking. I’m thinking chocolate-orange for the final cupcake?

That just leaves my waste. Oh yes, I have some. The 1/4 packet of salad. Despite my best efforts I have some left over. I’m not a wet-lettuce-leaf-fan. I can’t bring myself to eat it. It’ll get recycled with the garden waste.

That should empty the fridge nicely. As we are away I would normally fill it with long-life milk and/or wine bottles. However it’s likely we’ll be having a house-sitter, so I’ll leave it for them to fill the space.

There’ll be a couple of cake photo’s on Facebook later today for those who love a bit of cake (like me).

If anyone knows of a good egg-free cake recipe I’d love you to share. I’m also looking for ideas on making pancakes without egg, as I’ve had a very special request for these.

    My refrigerator looks nothing like yours, but I did do pretty good with waste this week. Just part of a dish that we really didn’t like. Today, I’m making a big batch of spaghetti sauce to see if I can make it to the tomatoes on the counter before they are too rotten to use.

    I stopped using eggs in my pancakes when I moved out on my own. I find them more tender that way. Perhaps you could just try leaving it out and see if there’s any difference?

        My recipe calls for 4 tsp of baking powder for 2 c flour, if that helps. They rise beautifully but that might be more than you wish to use, though – it is high in sodium.
