Food Waste Friday.
As always on a Friday I follow my No Waste Tastes Great routine. You can watch how I do it here.
Simply Being Mum’s Friday Fridge
I won’t itemise everything in the fridge this Friday. Everything is in date and fine to use going forward. On the bottom shelf I have been a little lazy and have popped in a chicken casserole that was slow-cooked yesterday but didn’t quite use up. Usually I do transfer to a container but it was late by the time it had cooled. It will be going in a different container to be frozen for lunches.
Unfortunately I do have some waste. Check out this severely dehydrated satsuma! And a rather wilted parsnip. (Off to the compost heap they go).
There is bad news, but there’s also good news.
A tasty save.
Knowing I won’t get opportunity to use up the courgettes and peppers over the weekend I sprung into action!
I set to work chopping:
Boiled up a pan of dried pasta while I stir-fried the vegetables with herbs and garlic:
Pulled some pesto out of the cupboard and Greek yoghurt from the fridge (although I can now make my own pesto)
Added the pesto to the vegetables (I also added some tomatoes that were in the fridge).
Combined the cooked pasta and the vegetables:
I split into 2 dishes, 1 to bake for lunch and 1 to freeze.
Added some Greek yoghurt, and stirred through:
Topped 1 with mozzarella and 1 with crumbled up cornflakes:
