…and pancakes save the day.
As I do every week, last Friday I put together a meal plan.
If you read my blog regularly you’ll know I’m a fan of the meal plan.
From how my mid-week fridge looks this Wednesday, its safe to assume that my meal plan isn’t quite going to plan.
The fridge is a little overstocked, even if I do say so myself.
The plan had been to rustle up a turkey mince lasagne for dinner this evening. It didn’t happen.
We had emergency pancakes with bacon and syrup instead.
I didn’t hear any complaints from the Kids’. (Oh well, once in a while doesn’t hurt!)
I’ve said it before – my fridge reflects the week I am having. Today has been a busy day, one of many busy days this week. As such, my fridge looks busy.
Upon opening the fridge and seeing the chaos inside (I tided before photographing) something had to be done. One area of the home I literally cannot bear to be unorganised is my fridge.
It’s second nature to me now, in my quest to reduce food waste, to keep an eye on my fridge and it’s contents.
I was surprised at myself, at how I’d let it slip and my messy mid-week fridge inspired me to take stock.
Unfortunately I found mid-week waste. π
Approximately 4 tablespoons of Greek yoghurt, and 2 slices of cooked ham. In my defence (if there is any defence) I didn’t buy the ham. It wasn’t in the meal plan. It was given to me. But as just because I personally haven’t wasted money, I’ve still wasted food.
It’s not acceptable for my food waste casualties to increase further this week. Therefore I’ve devised a contingency plan for the remaining fridge items. I’ll share on Friday. After all this Friday it’s #nowastetastesgreat

I can’t imagine any complaints about a pancake and bacon dinner! Pancakes with maple syrup are loved at our house. Breakfast-at-dinner happens a lot around here when a shopping trip is immiment and supplies are low. Which is the case right now… tonight we’re having eggs with what is left of the Christmas ham frozen in the deep freezer… and also a ham and cheese quiche is on the plan for the near future… gotta keep making meals until it’s time to shop again. Our fiscal month begins on the 21st. I’m getting back into menu planning again since my 1st trimester sickness is finally going away!

We usually have one breakfast for supper each week at our house – usually eggs of some kind – but when the kids were home it was pancakes and eggs, and well received π
