Simply Being Mum’s Friday Fridge
Top Shelf – Spreads, fats and cheeses.
Top Middle Shelf – Tomatoes, cucumber, peppers and homegrown peas still in their pods.
Bottom Middle Shelf – Kids lasagne (ready meal).
Bottom Shelf – Grapes and half a tin of baked beans.
It’ll be salad tonight for dinner. Probably tuna as I have some canned in the cupboard. That’ll use up a lot of the top middle shelf.
The grapes will be eaten over the weekend. But it looks as though I have some waste. Half a tin of beans that has been open a little too long. I wouldn’t normally store in the tin in the fridge like this, it slipped under the net in my rush to do something else this week!
As for the ready meal, well it’s not a usual sight in my Fridge. As I was out on the town (well in the village) last night with my running buddies, I left some quick heat up meals for the Kids and Hubby. However first-born wasn’t hungry so there’s a lasagne hanging around. I’m having it for lunch today!
That is if I get time. I’m up against it cake decorating this afternoon.
There was a baking disaster last night.
The top tier of a birthday cake, I am making, fell apart as I removed it from the pan.
Moral of the story, don’t bake and watch The Millionaire Matchmaker at the same time. But please do watch The Millionaire Matchmaker. Patti is pure genius.
So it was an early start baking a new cake – just one tier now – improvisation required!
No waste tastes great, so the not-so-perfect top tier will be eaten over the weekend, warmed with custard. It may look a little rough around the edges, but it’ll still taste good. In fact it seems whilst I was out, last night, someone may have had a slice?

How do you make your tuna salad, Jo? Just add tuna to the vegetables, or something else? The only way I’ve ever had tuna and salad together is mashed potato salad (potatoes, mayo and tuna mixed up together. Always looking for new ideas for cool meals in summer!

Hi Jo – Very simple. A bed of leaves – so a mixed salad – normally from a bag! Canned tuna on top, some cashew nuts, maybe some extra peppers and cucumber and cherry tomatoes. I do also add chopped hard boiled egg and balsamic vinegar. This is a great protein and vegetable meal – no major carbs in there.

Thank you, Jo – it sounds good, and the protein/veg meal is what I’ve been trying to have for my main meal (trying to lose weight). Looking forward to trying something new!
