Banana & Sultana Bran Loaf Recipe – Approx. 10 slices
You will need:
Equipment
Large Bowl
Scales
Metal spoon
Blender
Tea Towel
Small Loaf Tin
Butter and flour for greasing loaf tin (or use cake release)
Ingredients (Please check US Cup measurement as I used a converter – the amounts look sensible to me)
170g (6oz or 3 US Cups) Bran Sticks/Cereal
280g (10oz or 1 + 3/4 US Cups) Sultanas
85g (3oz or 1/2 US Cup) Brown Sugar
115g (4oz or 1+1/4 US Cups) Self Raising Flour
(This explains how to convert All-Purpose to Self-Raising)
150ml (1/4 Pint , 5floz or 0.6 US Cups)of Milk
2 very-ripe Bananas
Instructions:
Weigh out the dry ingredients into a large bowl
Mix together thoroughly
Blend the 2 Bananas with the milk
Pour the banana and milk combo into the dry ingredients
Mix well and cover with a tea towel
Leave to stand for at least at hour and up to 90 minutes
10 minutes before placing in oven pre-heat oven to 130 degrees (270F or Gas Mark 1/2 to 1)
In your greased and floured loaf tin spoon in the mixture
Place in the oven for a minimum of 45 minutes. Set the timer and check. It may need up to 60 minutes.
Remove, leave to rest then tip out onto a cooling rack
Enjoy – eat warm from oven or leave to cool. When completely cool place in an airtight container. Upside down is the best way to store the loaf.
