Simply Being Mum’s Friday Fridge

Top Shelf – Spreads, cheese and garlic (all in date)

Top Middle Shelf – Half a carton of chopped tomatoes, a large slice of leftover pizza base covered in tomato puree, some cooked pasta (in pink container) and a little bagged salad

Bottom Middle Shelf – Head of broccoli

Bottom Shelf – 4 pineapple rings

Rather a mixed fridge today, eh?

The chopped toms, pizza base, pasta and salad are leftover from last Saturday’s home-made pizza and cinema night. We watched Gnomeo and Juliet.

It is almost 6 days since I cooked the pasta and pizza, but as there’s no meat involved I’m having it for lunch, with the salad, topped with toms. Well, it needs using up, and to waste all of that wouldn’t be very good would it? If it tastes a little under par, so be it. Maybe next time I’ll use it up a little quicker?

The broccoli will make a nice slow-cooked soup.

Finally the pineapple rings. I’ve been experimenting recently, substituting pineapple for sugar in some recipes.

I also have these to use up, out of the fruit bowl.

I’m going to try a nectarine and banana bran loaf with no added sugar (pineapple instead). Fingers crossed it turns out as well as my earlier save this week. My no added sugar or fat banana and ginger loaf, which was yummy!

I do have a food waste confession. This is the carrot that got away. I’m not really sure how this happened. One day it was destined for a carrot cake, the next it looked totally inedible!

Ending on a positive note, I have been gifted multiple homegrown tomatoes this week, from my Mom and a friend.

Some are headed for the slow-cooker to become a Simply Smouldering Tomato Soup. And as next week will be the start of Simply Being Mum’s Simple Christmas Series, the others will be used to make Slow-Cooked Christmas Chutney. I know it’s only September, but a simple, frugal, homemade Christmas doesn’t happen overnight. This chutney is ideal, not only for the Christmas table, but also as a great gift for others.

    Do you have any problems with the somewhat stringy texture of pineapple when using it as a substitution for sugar? I know applesauce is used sometimes as a sugar substitute, but it’s pretty smooth.

      I roughly blend it, and it turns out just fine… I used banana in the loaf rather than pineapple, and that worked well also….

    What has been most helpful for me since reading your blog is only going to the store once a week. If I run out of something I substitute. No extra trips to the store means less money spent on groceries.

      It’s a pretty simple formula isn’t it? less trips to the store…less money spent! So pleased the blog is helping! 🙂

    That broccoli soup looks delicious! So does the loaf of sweet bread. Is that banana ginger or nectarine banana pictured?
    But I have to say, that’s one scary looking carrot!

    I might have been tempted to peel and scrub that carrot…. 🙂 Like Tina, I too, am more at ease with an empty fridge since reading your blog, and now perceive it as a strength not a weakness!
