Simply Being Mum’s Friday Fridge
Firstly apologies for the not so great shot. My DSLR camera isn’t charged (I’ve just discovered!) so I’m using my phone (not known for its quality images!)…
Top Shelf – Spreads, garlic and cheese. Including a small amount of parmesan.
Top Middle Shelf – Blueberries and red grapes
Bottom Shelf – 2 apples and 2 satsumas
Door – Milk and eggs
I also have this leftover…
From baking these…
And I have to share this anecdote (sorry to those who’ve heard it on Facebook)…
Collecting Daughter from school, yesterday, she remarks that there have been lots of complaints about the cakes we made for the Jubilee party.
Mortified I repeat ‘complaints?’… then ask ‘from who?’….
She confirms from the other pupils.
Interrogating her further, I realise something… ‘Do you mean compliments?’ I ask.
Daughter replies ‘ Yeah that’s it…compliments’.
Phew! 🙂
And back to No Waste Tastes Great…
So from what is left in the fridge (and the buttercream) there is more cake baking planned for this weekend. I’ll throw some blueberry muffins in for good measure also.
Apart from that there is just the parmesan to use up today. I have parmesan crusted haddock planned for dinner (with 3 fillets I have hanging around in the freezer). The fruit will be eaten as snacks over the weekend.

I like the picture of the cupcakes. They look so neat. It seems that I always have drips spilled on the sides of the papers. How do you fill them?

Really simple. Use much larger cases than required and only half fill. I’m careful putting the mixture in, and if the Kids help they have their own to do so they don’t drip down mine!

I like Jo’s method of using the larger size of muffin papers. Another way to avoid drips is to use an ice cream scoop for the batter, the kind that has a thumb attachment that you squeeze to scrape the ice cream or batter out of the scoop. I’m a messy scooper too, and this works for me. – Jo H.

Kids are fun, huh?! 😉 lol! The cupcakes look fabulous!!
On an off-topic, when I was a kid, we never had much food in the house (my mom was a poor single working mother) and now I always have lots of food in the house. I envy the way you shop, plan, etc.., but do you ever “worry” about ever not being able to get food, or if something happened and you only had 2-3 food items in your house what would you do, etc..?

Hey Carla. Without getting too deep, it’s interesting how our childhood affects how we do things later in life. Money was tight in my family home also, and we didn’t have a lot of packaged foodstuffs or treats/snacks etc… My Mom purchased one treat for me to have after dinner each evening, and they had to last because when they were gone, they were gone! (so it’s kinda ingrained in my psyche)
However… to answer your question – I never get worried about lack of food (I was once described as ‘irresponsible’ on another blog because of my attitude toward stocking food). In fact I find it more uncomfortable when my cupboards are stuffed to the brim. My thinking is that I am only ever 10 mins away from being able to source food (probably less than that). We live in an age where shops are open 24/7, and they always have stock of something. But – and I’ve spoken about this before, I live in the UK, a very predictable country. I was picked up on this, we do have industrial strikes occasionally, but nothing that would mean no food on the table. We aren’t going to experience a hurricane, or volcano, or earthquake of any devastation (I don’t think!?!). So that means I can be a little more confident that I will be able to get hold of food. I can always ask a neighbour – I do, do this – very often half way through baking when I need eggs! One thing that can’t really be substituted.
For me as long as I have flour, eggs and a few other basic ingredients I can feed the family. Eggs are amazing (if you eat them). I can make so many things, and quickly. Flour means I always have pizza bread and ordinary bread to hand, as well as cakes and biscuits. Potatoes are another one that are great to use up. Sometimes we may not eat what we fancy, but I’m so used to eating up what we have that it doesn’t bother me. If I really want something, but don’t have the ingredients I make sure I include on next meal plan. Hope that helps!

Wanted to comment on your comment above about egg substitution, since I do it all the time. I haven’t been brave enough to replace all eggs yet but my favourite cake recipe uses 4 which I don’t always have to hand. I’ll use two, then add a cornflour and water mix for the other two. Think it’s about 4 tablespoons of each. Although you cook more sponge cakes than I do, where you do need the lightness of the eggs. But for denser cakes, I don’t even notice the difference.
I came home to a very full fridge, so not even commenting on the state of it. Hoping to get on top of it this week, and back to normal next week.

I’ll have to give the egg thing a go to see if I can do it…. One recipe I do plan to share is using dates rather than oil and pineapple instead of sugar. This is for cake also.
