It’s Friday Guys! It’s time for …

No Waste Tastes Great

Fridays I take a little time first thing to strip down the fridge and perishables cupboard, clean both of them, take note of anything that needs replenishing, return any items back to the fridge leaving what needs using up on the counter.

So what is sitting on the counter in anticipation this week?

We have:

2 Free Range Chicken Breasts

Half a Punnet of Mushrooms

Some Ready Made Puff Pastry

Slow-cooked Ginger, Carrot and Lentil Soup

7 Carrots

So what’s the plan?

Quite a good and easy combination of foodstuffs this week:

The chicken, mushrooms and pastry will make a fantastic slow-cooked pie, which I will prep as soon as I have finished this post. That will be the Hubby’s dinner tonight. The Kids and I are attending a fish and chip super at the Village School tonight – so date night was cancelled anyway this week.

The soup I will use up for lunch today. The remaining 7 carrots I will slow-cook some more of the soup overnight tonight. This I will freeze and gift my very dear (vegetarian) friend who has just given birth to a beautiful baby girl.

If you like spicy soup I highly recommend taking a look, it is the nicest soup I have ever had, and although I have adapted it to make it even simpler, the initial inspiration comes from my favourite cookbook Ultimate Slow Cooker by Sara Lewis.

    I’m sad to report that I have some spoiled romaine lettuce this week. 🙁 I’ve been doing so well lately, but this lettuce just never got used over the past two weeks.

    The soup sounds great Jo. How is the new blog going?

      Oh Jenny Shocking !! HaHa!!
      The soup is fab – really fab so check back – presume gluten-free?
      Blogging generally going slow at mo – there’s a lot going on at Chez Wright which I won’t go into but I am struggling time wise to sit and write distraction-free.
      I am missing my blogging so much at the mo and have had some fantastic post ideas that have dried up due to time passing…
      ps – trying to sort the Mister Linky Widget so your details automatically pop up – am waiting for response from ‘Mister Linky’ himself!

      Not sure whether it’s your palate – but I reckon this would make a nice cold soup. I’ve tried it cold and tastes okay to me – it’s got a kick so it doesn’t need the heat to liven it up particularly. No reason to eat piping hot in my mind… would be good with Indian bread! 🙂
      Oh how I dream of hot weather!
