It’s Friday!
Time for No Waste Tastes Great
Those who follow the blog know that on Friday I follow my Friday Routine and also take part in Food Waste Friday over at The Frugal Girl.
This week what potential foodwaste delights do I have sitting on my counter in anticipation?
I have:
1 x Aubergine (Eggplant)
4 x Red Peppers
20 x Cherry Tomatoes
1 x Courgette (Zucchini)
Some Uncooked Fresh Puff Pastry
1 x Head of Broccoli
No take-away for the Hubby and I tonight then!
So as soon as I have finished typing I am going to:
1. Wash Vegetables
2. Slice the aubergine and line the bottom of Brenda (my Vegetarian Slow Cooker) with the slices.
3. Next layer with half the tomatoes.
4. Slice the courgette and peppers and put half on top of tomatoes.
5. Stir in two pressed garlic cloves into a 400g tin of chopped tomatoes and then pour half a tin (approx. 200g) of chopped tomatoes over the vegetables and sprinkle over some black pepper and mixed herbs.
6. Next do another layer of Aubergine, then tomatoes, then courgette and peppers and add the remaining 200g of chopped tomatoes. Sprinkle over black pepper and mixed herbs.
7. Leave in slow cooker for a minimum of 6 hours.
8. I will then remove and place in a baking dish, roll out the puff pastry and place over the top glazing with milk.
9. Pop in traditional oven for 20 minutes until the pastry has risen and serve with steamed broccoli
Voila! A mediterranean vegetable pie with steamed veg on the side!
I’ll edit this post later tonight with hopefully a photo and an update on whether or not it was edible

(22 Jan 2011 – Added to post: The recipe was edible – actually very nice – see photo’s below… sorry about quality – the light is so poor early evening in the winter, that the photo’s aren’t fantastic but better than nothing…)

Hi R – I really need to start photographing my dishes but the problem at the moment is it is dark early in the UK when they are ready to dish up and eat. I’ll see what I can do!

I’m sorry, but what is Aubergine? And what is courgette? I’m in the US and I’m surprised at how often I don’t recognize your ingredients. We speak the same language — more or less — shouldn’t we be eating the same food? lol

An aubergine is eggplant and courgette is zucchini.
