Simple Sausage Casserole Slow Cooker Recipe – Serves 4
This recipe is perfect for Kids as it is a twist on the basic sausages and beans on toast but has the added benefit of extra tomatoes – So versatile simply add some scrambled egg and you have an ‘all day breakfast’ enjoyed by Kids young and old!
You will need:
1. Standard Slow Cooker
2. 8 Sausages (or 4 if only 2 portions are required)
3. 2 x Large Tin of Baked Beans (1 tin if only 2 portions)
4. 2 x Tin/Carton of Chopped Tomatoes ( again 1 tin if 2 portions required)
Instructions:
1. Brown Sausages in a pan
2. Place sausages in the bottom of the slow cooker and cover with beans and tomatoes – ensuring sausages are covered and cooker is no more than two-thirds full.
3. Turn on low and leave for 6-8 hours – please note if only using 4 sausages and 1 tin of beans and tomatoes you will need to check the cooker after about 4 hours as it may cook quicker. Ensure sausages are piping hot and cooked throughout before serving when reducing cooking times.
4. This casserole can easily have a bbq twist by adding a tablespoon of bbq or jerk sauce to the slow cooker just before serving
Serve with buttered toast and/or scrambled egg
This casserole can be refrigerated and reheated the next day for a tasty lunch. Please never reheat food in a slow cooker! Use an oven or microwave and ensure food is piping hot throughout before serving.

This is a gorgeous recipe and a firm favourite at my childminding setting …. we serve it with oven baked potatoes , warm crusty bread or indeed with the traditional mash potato ! A nice twist on this is to break a few eggs into the casserole just before the end of cooking, so that they poach nicely in the baked beans …. happy tums all round !!!! 🙂

Back to my wonderful questions about British recipes… 😀 Is there a standard size that people are talking about when they say a “tin” or a “large tin”? If not, got any measurements in ml, g, or oz?
This recipe looks really good….I think I’m going to have to try it. In the slow cooker of course!

A large tin over here would be 400grams in weight for beans or tomatoes. This is a very simple recipe and a great way to add extra tomatoes to the meal for kids. I use frozen low fat high quality sausages. The reason for this is I actually cook my sausages before adding – which you wouldn’t need to do if they were fresh. I find that this type of sausage holds together a lot better once cooked. My kids aren’t keen on mushy sausages – which is what can happen when slow cooked – although you can blast in oven or under grill to harden once cooked if preferred! What I sometimes do is serve the kids their meal earlier, and then if I am eating later with Hubby I add chilli powder or sometimes paprika to add flavour – I like food with a kick. The chilli works great, and very often I add Kidney Beans also if doing this.
With slow cookers (as you probably know) the main thing is you do not fill more than 65% (approx 2/3rds full) – so if you add more sausages reduce the other ingredients, and less sausages means you can add more beans etc… Cooking for me is always an experiment, just go with it and see what you can conjure up!
ps See Charlie’s comment above – she cracks eggs in and poaches them – I haven’t tried this yet…

I’d just never considered adding tomatoes to a baked bean dish. The thing is that it’s not like I look at it and say “that’s really strange”; it’s just nothing I’d considered doing before.

I just saw this and I think it would go over really well at our house. I’m going to add it to my menu plan ASAP… my 2 year old daughter just happens to love baked beans. and I love the idea of adding tomatoes to them to make it more nutritious… also she loves sausages as well so this would be two of her favorites in one. I never would have thought to cook sausages with baked beans… I don’t think that is commonly done here in the States but I think it sounds delicious! thanks for this recipe.
