Just what you need to warm the family up as the days get colder and the nights longer!
Simple Chilli Sausage Casserole – Serves 4
You will need:
1. Standard Slow Cooker
2. 8 x Sausages
3. 2 x Red Peppers (chopped)
4. 1 x Large Tin of Baked Beans
5. 1 x Large Tin of Red Kidney Beans (drained and rinsed)
6. 1 x Tin/Carton of Chopped Tomatoes (Use 2 if you perfer larger servings)
7. 1 x Beef Stock Cube (crumbled)
8. 1 Teaspoon Chilli Powder (or 1 Tablespoon if you want to spice it up!)
Instructions:
1. Brown the sausages in a pan
2. Place sausages in the bottom of the slow cooker – turn on high
3. Add baked beans, tomatoes, kidney beans, chilli powder and stock cube.
4. Chop peppers and add to sauce – stir – ensure sausages are completed covered and that the slow cooker is no more than two-thirds full.
5. Place lid on, reduce heat to low and leave for 6-8 hours
6. About 15-30 minutes before serving (whilst you lay table etc…) check consistency and if you wish to thicken remove lid and turn to high.
Serve with Warm Garlic Bread
