Lazy but Tasty Lasagne! Serves 4
This recipe is best done on a day when you have access to your slow cooker in 2×4 hour slots. For example – prep at 8.30am leave 4 hours and then prep again at 12.30 and leave for 4 hours+
This is the easiest lasagne you will ever make and it will also probably be one of the tastiest! I offer no apology for the use of ready made sauces in this recipe as it is supposed to be a quick fix and an easy introduction to cooking lasagne in this way. A variety of more sophisticated lasagne recipes will follow shortly on this blog to suit a variety of tastes and abilities (and patience levels!)!
You will need:
Standard slow cooker
450g Beef Mince (I use extra lean)
1 Large Jar Red Lasagne sauce (500g)
1 Large Jar White Lasagne Sauce (500g)
Lasagne pasta sheets
1 Handful Grated Cheese
Instructions:
1. Crumble mince into slow cooker and add red lasagne sauce – leave 4 hours on low
2. Empty two-thirds of the mince from slow cooker into a measuring jug – no need to weigh/measure – approx. 1 Litre jug will be about right (Please be careful when removing mince as the cooker will be hot! Obvious I know but I wouldn’t want any injuries x)
3. Smooth remaining mince in slow cooker and then place broken pasta sheets on top (to fit best you can) – again nothing scientific here. Snap them and lay in – don’t worry if they overlap a little, it won’t matter.
4. Pour a layer of white sauce and spread then add layer of mince and spread, then a layer of pasta.
5. Repeat above as your slow cooker will accomodate three layers.
6. On top of the last layer of pasta add white sauce on top and then sprinkle cheese.
7. Leave on low for a further 4 hours (if you get opportunity remove lid for 20-30 minutes to reduce liquid)
8. Eat or alternatively turn cooker onto warm and leave up to a further 3-4 hours (with lid on).
How simple is that?
My Lazy lasagne can be frozen and reheated within a month or stored in the fridge for about 24 hours after cooking. Fantastic for a lunch the following day as I find lasagne improves when chilled before reheating.
If you fancy spicing it up add 1 tablespoon of Chill Powder to the red lasagne sauce.
