Simple Chicken Tikka Masala Slow Cooker Recipe

Simple Chicken Tikka Masala Slow Cooker Recipe – Serves 4

This Slow Cooker recipe is so easy as it requires very little preparation.  Authentic indian dishes can contain a long list of ingredients if cooking from scratch – this recipe is quick and easy and tastes fantastic!

Lazy but Tasty!

You will need:

1 x Standard Slow Cooker

4 x Skinless Chicken Breasts (I use free range)

1 x Onion (diced)

1 x Tin/Carton of Chopped Tomatoes

1/2 Jar of Tikka Masala Paste (I use Pataks)

2 x Tablespoons of double cream or natural yogurt for a lower fat version

Instructions:

1. Turn Slow Cooker on High

2. Dice onion and add to Slow Cooker

3. Cube chicken and add to Slow Cooker

4. Stir in 1/2 Jar (approx. 150g) of Tikka Masala Paste

5. Stir in Chopped Tomatoes

6. Replace lid and turn to Low – leave 6-8 hours

7. 15 minutes before serving remove lid and add cream/yogurt and stir

Serve with Rice and/or Naan

Please remember that whilst cooking you should not lift the Slow Cooker lid as this increases cooking time by 20 minutes each time you take a peek!  Ensure that chicken is covered by the sauce before cooking and then there is no need to stir during cooking.  Leave at least 6 hours to ensure chicken is cooked throughout – you can leave longer – I do!

Simple Vegetable Curry Slow Cooker Recipe

Simple Mild Vegetable Curry Slow Cooker Style – Serves 4

I’d like to thank my Son’s nursery for the inspiration behind this great recipe! 

This is a fantastically simple and tasty recipe that is mild enough to introduce curry to Kids, but also is so tasty that adults cannot resist  joining in at the family dinner table…

You will need:

1 x Aubergine (peeled and diced)

2 x Peppers (peeled and diced)

1 x Large Tin Baked Beans

1 x Large Jar Tomato and Basil Sauce

1 x Cup of Peas (Frozen or fresh it doesn’t matter)

1 x Cup of Sweetcorn (I use frozen for convenience)

1 x Teaspoon of mild or medium curry powder depending on taste

4 x Potatoes (Peeled and diced into small cubes)

Instructions:

1. Before you prep anything else peel and dice the aubergine and perppers and put them in an ovenproof dish.  Put in pre-heated oven at 180 degrees.

2. Peel and dice potatoes into small cubes

3. Put beans, sauce, peas, sweetcorn, potatoes and curry powder into Slow Cooker

4.  Remove peppers and aubergine from oven and blend – add to Slow Cooker

5.  Turn Slow Cooker on Low and leave for 8 hours

6.  Serve with rice and naan

So simple it can’t go wrong and so tasty

Simple Rogan Josh Slow Cooker Recipe

Simple Rogan Josh Slow Cooker Recipe

Lazy but Tasty! Serves 4

This is an amazingly simple yet tasty curry

You will need:

Standard Slow Cooker

4 x Skinless Chicken Breasts (I use free range) – alternative Lamb or Beef

2 x Tins/Cartons Chopped Tomatoes

2 x Peppers

1 x Onion

1/2 Jar of Rogan Josh Paste (I use Pataks)

Instructions:

1. Dice the meat into cubes (approx. 1″ Sq)

2. Turn slow cooker onto high and put meat in whilst you prep vegetables

3. Chop onion and add to cooker – add paste at this point and coat meat

4. Cut peppers into similar size chunks (approx. 1″ Sq) and add to cooker

5. Stir in the tomatoes, replace lid and turn slow cooker to low

6.  Leave for 6-8 hours and serve with rice and naan
