Simply Being Mum’s Friday Fridge

Not bad eh?

There’s just cucumber and grapes to consume over the weekend. But this may be the last cuke you see sitting in my Fridge for a while. This item of salad’s days have been numbered since I have failed to find it sold without plastic wrapping. And as it seems to be potential food waste most weeks, I think it’s going off the menu for a while.

As the fridge is bare, we are having a takeaway this evening, for the first time in a long-time. It’s a day off for me. Yay!

Which is very much welcomed because yesterday lunchtime, this is what my Fridge looked like.

I had an hour before I left the house for a playdate. But I knew immediate action was required.

So, I…

1. Roughly chopped the tomatoes and onion, added a splash or 2 of balsamic vinegar, some herbs and garlic and sautéed for 20 minutes.

It’s now a frozen pasta sauce for emergencies!

2. Also into the freezer went the remaining strawberries. They were introduced to some cousins I’d frozen a week or so back.

Protein smoothies here they come!

3. I’m a soup fan. No question then. The cauliflower and cheddar were popped in Brenda (slow-cooker) to make the simplest soup on this planet. I even popped the small block of parmesan in as there are no plans for it to make an appearance in the meal-plan over the weekend.

Another addition to the freezer for lunches next week. Oh and I’ll partake in a portion this lunchtime as well.

4. Can you see the cookie dough? All week there’s been cookie dough in my fridge. Instead of batch cooking it in one go, every couple of days I’ve made it an activity with the Kids.

These were taken to the playdate. Dan chose what shape to do each child. I’d been pleasantly awoken by the post-lady early with a delivery. I’d been itching to try my new cookie-cutters out!

A banana and sultana bran loaf also came along to the playdate. I’d spied two very ripe bananas over breakfast yesterday, and got baking straight after the school run.

The recipe is over at Jo-Jo Bakes for those who’d like to give it a whirl. Very simple, fool-proof. And of course, very tasty!

I do have 2 food confessions this week.

Firstly I didn’t make the rough-puff-pastry as planned. I thawed out some puff-pastry I had. But, I will be making it next. Without fail.

Secondly I lost a satsuma and a strawberry. They were mouldy. I draw the line at mould.

    I made some gazpacho yesterday – just popped tomatoes, cucumber, onion, garlic, vinegar and olive oil into blender, whizzed it up then chilled. Delicious in the summer (if we get one!) and a good way to use up old salad veg! You can also add breadcrumbs to it.

      Rebecca – I have never had gazpacho. I’m going to give it a whirl this week – Thank you. No point waiting for Summer, I’m thinking this year it may skip the UK!

    Speaking of plastic wrapped cucumbers, in the US you can buy either English-style cucumbers in plastic wrap or what we think of as regular cucumbers, just farm style, no plastic. If you happen by a farm stand on some country-side outing, you may find unwrapped cukes. Just a thought.
    My fridge is bare with the exception of condiments. No waste here. That’s what happens when it’s summer, the teens are out of school and they go through the fridge like a hoover on steroids.

      Hey Lili… the plastic wrapping has me flummoxed. I purchased a zucchini/courgette this week. That doesn’t come wrapped. It’s very strange! I’m giving up on cuke for a bit (gonna use the last up trying Rebecca’s recipe above). Hope the Kids are enjoying their school-break!

    Could you please post your cauliflower & cheddar soup recipe? I am still looking forward to your e-cookbook (and hope I haven’t missed it! have not been online as much since summer began). We’ve had wonderfully flavorful fruits and veg so far this spring and summer – maybe the odd weather (mild winter, unusually cool & rainy spring, immediately followed by HOT HOT HOT!) is the reason.

    Impressive Jo! Not much food waste over here – it’s school holidays so most things are getting eaten quickly. Would you believe, even though I live on the other side of the world, we have the same cookie cutters??!! I actually gave most of mine to the op-shop a few months ago because you have to use fairly small ones to make successful gluten-free biscuits, but in years gone by we had so much fun with those cutters and play-dough (home made, of course!).

      Hi Clare – I am very pleased with my cutters – great mind think alike eh?
      I’m going to have to give gluten-free a go, just so I can understand the differences. Hmm now that’s an idea for Jo-Jo Bakes. Leah’s keen to ping Zoe, so expect something this weekend!

    Just looked closely at your cookie cutters and we too have exactly the same ones, I bought them several years ago and have used them for many party biscuits (sorry, cookies for those not in the UK!). In fact for my son’s birthday party next month I was going to get the kids to do biscuit decorating as one of the activities.
